The best way to adjust is to set it such that with the countershaft, swingarm pivot and rear axle all in a single plane (so basically swingarm level with the ground) you have just a little slack at the chain's tightest spot. You'll need to squash the rear suspension down to achieve this. On a mini I can usually do this by bending over the seat, grabbing the swingarm and pulling with one hand while checking chain slack with the other.
